The new series of Sun Moon flours is called "Coupage", and it is not by the way. This is the result of our experience in the field of grain and bread production, and specifically in the revival of the ancient varieties of wheat. More info on the subject: Einkorn and ancient varieties of wheat.
As you may know, from the very beginning of the Sun Moon bread back in 2002. We laid the philosophy of sustainability and environmentally friendly agriculture. Producing quality and healthy foods with attention to the environment and the society. We go a step backwards to the old-fashioned methods of food processing. We do not spray with Fast Profit and we do not add any Artificial Certificates!
From the end of 2017. Sun Moon Мill works entirely with ancient varieties of wheat!
What does it mean? We no longer process hybrid and modern wheats for our flours. We have replaced the ordinary wholegrain flour with "Wholgrain Coupage Flour", and the sifted Type Wholemeal with "Wholemeal Coupage Flour". We created this mix of varieties with two aims:
1. To eat grains that nature has known for centuries. Sustainable plants with naturally tolerated gluten, less yielding but tasty. We combined:
Triticum monoccocum, T. dicoccum, T. spelta, T. aestivum
2. To make it easier for people who prepare bread at home - This flour has very good baking qualities.
