Freshly stone milled Unbleached White flour - 'Coupage', combines several ancient wheat varieties. This flour is obtained by sifting only, it has not been undergoing procedures for bleaching, oxidizing, ozonizing or aging.

This is our finest flour.

Wheat Banks - T. aestivum - variety registered at the beginning of the century and cultivated to date by farmers through natural selection.
Spelta - T. spelta - an ancient wheat variety. Used mainly in Germany and northern Europe.
Black Emer - T. dicoccum - an ancient wheat variety, Two-wheat spruce. Common in the Balkans and the Mediterranean.
Einkorn - T. monococcum - the "father" of all the wheat.

Flour is suitable for bread and other bakery products, from marmalade muffins to complex artistic bread with long fermentations.
